3ripe mangoesdiced
1cucumberpeeled and diced
1sweet red bell pepperdiced
1/4cupred onionfinely diced
1-3jalapeñosseeds removed and finely diced (adjust to heat preference)
1bunch fresh cilantrochopped
2-3limesfreshly juiced
Himalayan pink saltto taste
Instructions
Dice the mango, cucumber, red bell pepper, red onion, and jalapeños. Chop the cilantro. *If using a food processor, pulse gently to avoid over-processing. You want texture, not puree.
Add all diced ingredients to a large mixing bowl.
Squeeze in the juice of two limes to start. Stir gently to combine.
Add Himalayan pink salt to taste. Mix well and taste test.
