This Thai inspired chicken is tender and bursting with flavor, marinated in a blend of warm spices and coconut cream! The smooth, nutty, and tangy almond butter sauce is wonderful for drizzling on your chicken or dipping your chicken strips in, whichever you prefer.

This week we decided to make this Thai chicken with an asian inspired bowl. We used kelp noodles and mixed in purple cabbage, carrots, cucumber, sweet peppers, green onions, cilantro, and coconut aminos. Then we topped the bowls with the Thai chicken and almond butter sauce. This was such a wonderful combination of flavors!
You can grill this chicken on your bbq or pan sear and bake it in the oven. We’ve tried cooking it many different ways and all have turned out wonderful. One year we even made these up at elk camp on the grill and it was fantastic!
I love experimenting with flavors and creating new recipes that align with my anti-inflammatory diet. This one definitely checks all the boxes of being both healthy and delicious!
Health Benefits of this Thai Chicken and Almond Butter Sauce:
Garlic: Garlic contains allicin which is antimicrobial and antiviral. This helps the immune system to fight infections. It is also full of antioxidants and anti-inflammatory properties.
Ginger: This anti-inflammatory is wonderful at reducing painful inflammation and boosting the immune system. I try to incorporate it into as many of my meals and beverages as I can.
Turmeric: Turmeric is an amazing and powerful superfood. The curcumin compounds in turmeric do wonders for combating inflammation and boosting the immune system. Some studies have even shown that curcumin can help inhibit the growth of cancer cells. Turmeric is also a strong antioxidant which can help our bodies detox and fight free-radicals.
Almond Butter: Almonds are a healthy source of fat and fiber. They can help with cholesterol, brain health, and gut-health. Almonds also have magnesium among other nutrients and vitamins.

How to make the Thai Chicken Marinade with Almond Butter Sauce:
Thai Chicken Marinade Ingredients:
- 1 lb chicken breasts cut into strips
- 2 cloves garlic (minced)
- 1/2 inch fresh ginger (minced or grated)
- 1/4 cup coconut cream or milk
- 2 tsp honey or coconut sugar
- 1 tsp coconut aminos
- 1 tsp lime juice
- 1/2 tsp turmeric
- 1/2 tsp coriander
- 1/4 tsp cumin
- 1/4 tsp sea salt
Almond Butter Sauce Ingredients:
- 1/4 cup almond butter
- 3 tbsp coconut cream or milk
- 2 tsp coconut aminos
- 2 tsp lime juice
- 1 clove of garlic (minced)
- 1/4 inch ginger (minced)
Thai Chicken Marinade Instructions:
1. Cut your chicken breast into thin strips. Place the chicken in a shallow dish and set aside for now.
2. Peel, then mince 2 cloves of garlic and 1/2 an inch of ginger.
3. In a small bowl mix together the garlic, ginger, coconut cream, honey, coconut aminos, lime juice, turmeric, coriander, cumin, and sea salt.
4. Pour the above mixture over your chicken and toss to coat all the chicken in the marinade.
5. Cover the dish and place in the refrigerator for 4 hours to overnight.

Almond Butter Sauce Instructions:
1. Peel and mince the garlic and ginger.
2. In a small bowl, mix together the garlic, ginger, almond butter, coconut cream, coconut aminos, and lime juice.
Cooking the Chicken:
There are many different ways to cook your chicken. Grill, pan-fry, or bake are some of the ways we have cooked this Thai chicken.
We often use a cast iron pan and sear the chicken strips for two minutes on each side, over med-high heat. Then move to the oven and bake for around 8-10 minutes at 375℉.
Make sure your chicken reaches an internal temperature of 165℉.
Tips and Variations:
Make asian inspired bowls to go with the Thai Chicken and Almond Butter sauce. We used kelp noodles, purple cabbage, carrots, cucumber, red pepper, cilantro, green onion, and coconut aminos in the bowls. Then we topped them with the Thai chicken and almond butter sauce. I would definitely recommend this combination!

For the sauce you can use peanut butter or sunflower seed butter in place of the almond butter.
The chicken could be cut into long strips and placed on skewers (like chicken satay) for easy grilling.

Ingredients
