Creamy Gut-Healing Tuscan Chicken Soup (Dairy-Free)

This Creamy Gut-Healing Tuscan Chicken Soup is cozy, nourishing, and full of flavor! It has just the right touch of creamy richness and subtle sweetness. I love that it’s dairy-free and full of wholesome anti-inflammatory ingredients like garlic, bone broth, coconut cream, and basil! These foods can help reduce inflammation and support natural healing.

This Tuscan-inspired soup has quickly become one of my favorite anti-inflammatory meals! It’s the perfect blend of comfort and nourishment, that supports your gut health, boosts your immune system, and leaves you feeling refreshed and restored.

What makes this Creamy Tuscan Chicken Soup Gut-Healing and Anti-Inflammatory?

Bone Broth: One of the best gut-healing bases. It’s packed with collagen, glutamine, and minerals that help seal the intestinal wall, soothe the gut lining, lubricate joints, and reduce inflammation systemically.

Garlic: Garlic contains allicin which is antimicrobial and antiviral. This helps the immune system to fight infections. It is also full of antioxidants with anti-inflammatory properties. Garlic acts as a natural prebiotic, feeding beneficial gut bacteria and helping to maintain a balanced microbiome.

Coconut Cream: Creates a rich, creamy texture without dairy while providing healthy fats that nourish the gut and support hormone balance.

Basil: Has natural anti-inflammatory compounds and lots of antioxidants, beta-carotene and vitamin K. Basil may also help improve cognitive function and overall wellness.

Spaghetti Squash: A nutrient-dense, low-carb alternative to pasta that adds a slightly sweet flavor and gentle texture, while being easy on the digestive system.

Spinach: A superfood rich in iron, vitamins, and minerals that help reduce inflammation, support detoxification, and promote muscle recovery.. This antioxidant-rich green is a staple in my anti-inflammatory diet!

How to Make this Dairy-Free Creamy Tuscan Chicken Soup:

Ingredients (with some tips):

An important part of my anti-inflammatory diet is making sure to always buy organic ingredients (read more about why here) and to also check ingredient labels, making sure there isn’t unwanted additives.

  • 1-2 tbsp Extra Virgin Olive Oil
  • Large Sweet Onion (chopped)
  • 6 Garlic Cloves (chopped)
  • 1.5-2lbs Pasture-Raised Chicken Breast (chopped into bite size pieces)
  • 2 tsp Oregano (dried)
  • 2 tsp Parsley (dried)
  • 3/4 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1 cup Sun-dried Tomatoes:
    • Look for brands that don’t have unnecessary ingredients or seed oils… (I order the 365 brand off Amazon)
  • 3 cups Bone Broth
  • 2- 15oz cans Full-Fat Coconut Cream
  • 2 tbsp Tomato Paste
  • 1 Small Roasted Spaghetti Squash (more instructions for roasting below)
  • 1 tsp Lemon Zest
  • ~ 5 cups Fresh Spinach
  • Fresh Basil (chopped for garnish)

Step by Step Instructions for this Anti-Inflammatory Soup:

Before making the soup you will want to start roasting your spaghetti squash. Step by step instructions for roasted spaghetti squash:

  1. Preheat your oven to 400℉ and stick your whole spaghetti squash in the oven while it preheats. This helps soften the skin so it is much easier to cut into.
  2. When your oven is preheated, pull out the spaghetti squash. Cut the ends off and slice the squash in half lengthwise (Like the image below). Then remove all the seeds from the squash.
  3. Drizzle and rub olive oil over the inside of the spaghetti squash and place the halves face down on a baking sheet.
  4. Return the squash to the oven and allow it to roast for 20-30 minutes depending on the size. The flesh of the spaghetti squash will be fork tender and easily flake apart when it is ready.
  5. Use a fork to separate and remove all the spaghetti squash ‘noodles’ from the skin. (These will be added to the soup.)

Preparing and Cooking the Dairy-Free Creamy Tuscan Chicken Soup:

*While your spaghetti squash is in the oven roasting you can begin chopping ingredients and preparing the soup.

  1. Preheat a dutch oven or large stock pot over medium-high heat. Add extra virgin olive oil, around 1-2 tbsp for sautéing.
  2. Add your chopped onion and sauté 3-5 minutes, until caramelized.
  3. Then add in the chicken and garlic. Sauté to brown the chicken.
  4. While chicken is browning, stir in the oregano, parsley, salt, and pepper.
  5. After browning the chicken, add the bone broth, coconut cream (full-fat only), tomato paste, and spaghetti squash noodles. Stir this all together and bring to a boil.
  6. Reduce the heat to simmer, covered for 20 minutes or up to 1 hour.
  7. Stir in the spinach, simmer for a few more minutes to wilt the spinach.
  8. Stir in the lemon zest and garnish with fresh basil.
  9. Serve warm and enjoy this creamy gut-healing tuscan chicken soup.

FAQ About this Soup:

What should I pair this soup with? A loaf of homemade sourdough, gluten-free rolls (AWG bakery) or toasted gluten-free buckwheat sourdough (Pacha Bread) are great options with this tuscan chicken soup! This gut-healing soup is satisfying and hearty enough to enjoy on its own too.

Can I use leftover rotisserie chicken instead of raw chicken? Yes, you can absolutely use leftover rotisserie chicken! My husband and I often pre-cook chicken or turkey breast, shred it, and freeze it to have on hand for quick last minute meals. We have used shredded turkey breast in this recipe and it is wonderful.

What can I use instead of spaghetti squash? You can use cooked beans, lentils, or even just chopped zucchini. We have made a few different variations like that and they were delicious too.

Can I make this soup without tomato paste or sun-dried tomatoes? Definitely! It will change the flavor a little bit but still make a gut-healing creamy soup! You can also use fresh cherry tomatoes in place of the sun-dried tomatoes. We made it that way a couple times and it was still so good!

How to Store and Freeze Your Creamy Gut-Healing Tuscan Chicken Soup:

This anti-inflammatory creamy chicken soup can last for up to 5 days in the fridge. We love to store it in glass jars to avoid plastics and mess from other Tupperware.

Freezing this Tuscan Chicken Soup:

This gut-healing soup makes a wonderful freezer meal. It can last for months in the freezer and reheats as if it were freshly made.

If you’re freezing the soup in glass jars be sure to allow the soup to cool completely before moving to the freezer. I like to cool the soup, in jars, in the fridge overnight and then move to the freezer the next day. Also make sure to leave room at the top of the jar for expansion as the soup freezes.

Another way that I love to freeze and store my soups is with these souper cubes’. These are 1 cup portions (they also sell 2 cup sized trays). Once frozen I can pop the cubes out and put them into a reusable freezer bag. This makes it easy to grab one serving and reheat for meals without any planning ahead.

    I made this for dinner! Love this recipe as I never tried spaghetti squash in a soup. So good. I swapped out the coconut milk for Fairlife whole milk becuase I can tolerate the dairy and I had it on had. Definitely a keeper!
