Garlic roasted cauliflower and green beans are one of my favorite side dishes! It pairs wonderfully with so many different meals and it is super simple to make. I’m sure you will love it too. The roasted vegetables are so tender and delicious and the roasted garlic cloves melt in your mouth.
This garlic roasted cauliflower and green bean dish is a favorite to make in the summer when we have lots of green beans from the garden. However, we definitely make this delicious side dish year round. My family loves having this as a side dish during holiday gatherings.

We love to pair this garlic roasted cauliflower and green beans with:

How to make garlic roasted cauliflower and green beans:
Ingredients:
- 1 head of fresh Cauliflower
- 1 lb of fresh Green Beans
- 6-8 cloves of garlic (or more if you love roasted garlic)
- 1/2 cup Extra Virgin Olive Oil
- Salt
- Pepper
- Garlic Powder
Instructions:
Preheat your oven to 425℉. If using a cast iron baking sheet you will also want to preheat it in the oven. I prefer to roast these veggies on a cast iron baking sheet like this one on Amazon.
Peel the garlic and cut it into chunks or thick slices. Cut the stems off the green beans and cut them in halves. Cut the cauliflower into bite size florets.

In a large mixing bowl, add the cauliflower florets, green beans, and garlic.
Season generously with salt, pepper, and garlic powder.
Add around 1/2 cup of olive oil to the veggie mixture and toss together until everything is well coated. Add more olive oil as needed until the cauliflower, green beans, and garlic are all coated.
Spread the cauliflower and green bean mixture evenly onto your baking sheet.
Roast in the oven for 25 minutes or until the vegetables are tender and golden.

Tips for making garlic roasted cauliflower and green beans:
Sometimes we will turn on the broil setting on our oven for the last few minutes of roasting. This helps to give a nice golden crisp over the cauliflower.
I recommend using a high quality fresh organic extra virgin olive oil in this recipe. The quality of the olive oil is important to enhance the flavor in this recipe.
