Gluten-free Meatloaf with Ground Turkey

This gluten-free ground turkey and ground pork meatloaf is super moist and flavorful! It melts in your mouth with its tender meat, savory flavors, and a hint of sweetness. The shredded zucchini and caramelized sweet onion are such a pleasant addition to this turkey meatloaf.

If you grew up in the late 80’s and 90’s like I did, you know that meatloaf was still a staple meal in most homes and for a good reason. Not only is meatloaf an easy meal to feed a family, it is packed with protein and beneficial nutrients.

We make this often throughout the year. I especially love making it for camping or hunting trips. It is so easy to reheat over a fire or grill wrapped in parchment paper and foil. It also freezes really well if you want to make it in advance. Read more in my tips below about prepping it for freezing and taking camping.

I recently made this gluten-free meatloaf for my mom and I, we were traveling and had a long drive through the dinner hour. We ate the meatloaf cold with a sweet potato salad. My mom said it was the best meatloaf she had ever had.

What to Serve With Gluten-free Turkey Meatloaf:

We love pairing this gluten-free turkey meatloaf with a sweet potato dish and roasted veggies. It would also go great with a salad. Here are some ideas of side dishes to make with this meatloaf:

Ingredients in this Gluten-free Turkey Meatloaf:

  • Coconut oil (for sautéing the onion, garlic, and zucchini)
  • 1/2 cup Sweet Onion (minced)
  • 2 medium Zucchini (finely shredded)
  • 3 Garlic Cloves (minced)
  • 1 lb Ground Turkey
  • 1 lb Ground Pork
  • 2 Eggs (beaten)
  • 1/2 cup Primal Kitchen Hawaiian BBQ Sauce or Tomato Pureé
  • 3/4 cup Almond Flour
  • 1 tbsp Tomato Paste
  • 1 tbsp Fish Sauce
  • 2 tsp Dijon Mustard
  • 1 tsp Apple Cider Vinegar
  • 3/4 tsp Sea Salt
  • 3/4 tsp Oregano
  • 1/4 tsp Pepper

Steps to Make this Gluten-free Turkey Meatloaf:

Preheat the oven to 350℉ and prepare a loaf pan. I use a large 9X5 loaf pan.

Heat a skillet over medium-high heat. Add about 2 tbsp of coconut oil, the onion, zucchini, and garlic. Sauté for about 7 minutes or until the onions are caramelized and the zucchini is tender.

Meanwhile, place the remaining ingredients in a large bowl. Mix until all the ingredients are well combined.

Add the sautéd onion, zucchini, garlic and mix until they are incorporated into the meat mixture.

Press the meat into the loaf pan and bake for around 1 hour and 20 minutes. The time may vary depending on your oven and loaf pan. I prefer to use a meat thermometer to make sure the loaf is thoroughly baked.

Remove from the oven and allow the meatloaf to rest for 15 minutes before cutting into and serving.

Tips and Substitutions for this Meatloaf:

This is so nice to make ahead of time, freeze, and then take on camping trips. It thaws and reheats really well over a campfire. If you decide to do this, I recommend slicing it and wrapping each slice individually before freezing and taking on a trip. I like to wrap it first in parchment paper to protect my meatloaf from coming in contact with the aluminum foil. Then I wrap the foil as the outer layer so that it is ready to throw over the fire.

You can, of course, use different meats in this gluten-free meatloaf. I prefer the combination and flavors of the turkey and pork together but I know this would also be delicious with elk or even ground chicken. You could also make it with just ground turkey. I’d love to hear in the comments below if you try different combinations of meat and how it turns out.

Notes

I love to use Primal Kitchen Hawaiian Style BBQ Sauce in this recipe but we’ve made it before with just tomato pureé and it is still wonderful!

    This looks and sounds delicious. I’ve been trying to cut back on gluten without giving up comfort food, and this meatloaf might be my new go-to. I like that it doesn’t rely on weird ingredients. I’m looking forward to trying it soon!

    This is such a great meatloaf recipe. I can’t even remember the last time I had meatloaf, and I always loved eating them!
